Stephen Colbert interviewed food writer Michael Pollan last night about his new book Cooked. "Michael, you have a food book problem," Colbert tells his fourth-time guest. "No matter how many food books you write you're not gonna fill that hole inside of you." The thesis of Cooked, as Pollan explains to Colbert, is: "The question about your diet isn't 'What are you eating?' but 'Who's cooking it?'" Colbert confesses his own poor eating habits, "I base all my eating on the band Meatloaf."

The interview winds its way through Pollan's favorite junk food (Cracker Jack), the four primary techniques humans developed to transform food (yes, fermentation's one of them), and ways to eat healthier at home (cook for yourself). Do watch to the end for Colbert's take-down of whole wheat pasta.
